Paleo Slow-Cooker Short Rib Tacos with Homemade Tortillas



Grain-free homemade tortillas are used to make these flavor-filled Paleo Slow-Cooker Short Rib Tacos. This is a tasty and filling Paleo dish that's ideal for a special occasion or family meal.

Ingredients:

  • 2 lbs beef short ribs
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 cup beef broth
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp chili powder
  • Salt and pepper to taste
  • 1 cup almond flour
  • 2 tbsp coconut flour
  • 1/4 tsp baking soda
  • 1/2 tsp salt
  • 2 tbsp coconut oil
  • 1/4 cup water
  • Toppings: Guacamole, salsa, shredded lettuce, diced tomatoes, and sliced avocado

Instructions:

In a slow cooker, combine the beef short ribs, diced onion, minced garlic, beef broth, ground cumin, smoked paprika, chili powder, salt, and pepper

Cook on low for 6-8 hours until the short ribs are tender and can be easily shredded with a fork

While the short ribs are cooking, prepare the homemade tortillas

In a mixing bowl, combine almond flour, coconut flour, baking soda, and salt

Add coconut oil and water to the dry ingredients and mix until a dough forms

Divide the dough into small balls and roll them out into tortilla shapes between two sheets of parchment paper

Heat a skillet over medium heat and cook each tortilla for about 2 minutes on each side until they are lightly browned and pliable

Once the short ribs are done, remove them from the slow cooker and shred the meat with a fork

Discard any bones

Serve the shredded short rib meat on the homemade tortillas and top with guacamole, salsa, shredded lettuce, diced tomatoes, and sliced avocado

Slow Cooker Brown Sugar Meatloaf



This Brown Sugar Slow Cooker Meatloaf is a tasty take on a classic comfort food. The brown sugar glaze gives the meatloaf a sweet and savory taste that goes well with it. Plus, this recipe is very simple to make because it uses a slow cooker.

Ingredients:

  • 1 1/2 pounds ground beef
  • 3/4 cup breadcrumbs
  • 1/2 cup milk
  • 2 eggs
  • 1/2 cup brown sugar
  • 1/2 cup ketchup
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder

Instructions:

Put the ground beef, breadcrumbs, milk, eggs, salt, pepper, garlic powder, and onion powder in a large bowl and mix them all together until they are well mixed

Put the loaf-shaped mixture in the slow cooker

Put brown sugar, ketchup, and Worcestershire sauce in a small bowl and mix them together

Cover the meatloaf with the brown sugar mix

You can cook the meatloaf on low for 6 to 8 hours or high for 3 to 4 hours

Make sure the lid is on tight

Carefully take the meatloaf out of the slow cooker when it's done cooking

Let it rest for a few minutes before cutting it

Serve meatloaf slices with any sides you like, and enjoy!
