Lemon and Thyme Chicken Salad



A tasty and refreshing salad with grilled chicken marinated in tangy lemon and fragrant thyme. It is served on a bed of mixed greens with crumbled feta cheese, cherry tomatoes, cucumber, and red onion. For a quick and healthy meal, this Lemon and Thyme Chicken Salad is great.

Ingredients:

  • 2 boneless, skinless chicken breasts
  • 1 lemon, zested and juiced
  • 2 tablespoons fresh thyme leaves, chopped
  • 3 cups mixed salad greens
  • 1 cup cherry tomatoes, halved
  • 1/2 cucumber, thinly sliced
  • 1/4 red onion, thinly sliced
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions:

In a bowl, combine the lemon zest, lemon juice, chopped thyme, olive oil, salt, and pepper to create a marinade

Place the chicken breasts in a resealable plastic bag and pour the marinade over them

Seal the bag and massage the marinade into the chicken

Marinate for at least 30 minutes in the refrigerator

Preheat your grill or grill pan over medium-high heat

Grill the marinated chicken breasts for about 6-7 minutes per side or until cooked through and no longer pink in the center

Remove from heat and let rest for a few minutes before slicing

In a large salad bowl, combine the mixed salad greens, cherry tomatoes, cucumber slices, and red onion slices

Top the salad with the sliced grilled chicken

Sprinkle crumbled feta cheese over the salad

Drizzle with a bit of olive oil and season with salt and pepper to taste

Toss the salad gently to combine all the ingredients

Serve the Lemon and Thyme Chicken Salad immediately, and enjoy!

Ground Turkey Sweet Potato Stuffed Peppers



This meal, Ground Turkey Sweet Potato Stuffed Peppers, is both healthy and tasty. Spices, ground turkey, and sweet potatoes come together to make a filling dish that's great for any event.

Ingredients:

  • 4 large bell peppers, halved and seeds removed
  • 1 pound ground turkey
  • 2 medium sweet potatoes, peeled and diced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • 2 tablespoons chopped fresh parsley, for garnish

Instructions:

Preheat the oven to 375F 190C

In a skillet over medium heat, cook the ground turkey until browned

Drain any excess fat

Add diced sweet potatoes, onion, and garlic to the skillet with the turkey

Cook until vegetables are tender, about 8-10 minutes

Season the mixture with cumin, smoked paprika, salt, and pepper

Stir to combine

Fill each halved bell pepper with the turkey and sweet potato mixture

Place them in a baking dish

Cover the dish with aluminum foil and bake for 25-30 minutes, or until the peppers are tender

Remove the foil, sprinkle shredded cheddar cheese over the stuffed peppers, and return them to the oven

Bake for an additional 5 minutes, or until the cheese is melted and bubbly

Garnish with chopped fresh parsley before serving
