Ingredients:

  • 2 lbs beef short ribs
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 cup beef broth
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp chili powder
  • Salt and pepper to taste
  • 1 cup almond flour
  • 2 tbsp coconut flour
  • 1/4 tsp baking soda
  • 1/2 tsp salt
  • 2 tbsp coconut oil
  • 1/4 cup water
  • Toppings: Guacamole, salsa, shredded lettuce, diced tomatoes, and sliced avocado

Instructions:

In a slow cooker, combine the beef short ribs, diced onion, minced garlic, beef broth, ground cumin, smoked paprika, chili powder, salt, and pepper

Cook on low for 6-8 hours until the short ribs are tender and can be easily shredded with a fork

While the short ribs are cooking, prepare the homemade tortillas

In a mixing bowl, combine almond flour, coconut flour, baking soda, and salt

Add coconut oil and water to the dry ingredients and mix until a dough forms

Divide the dough into small balls and roll them out into tortilla shapes between two sheets of parchment paper

Citrus Stripe Cookies



Citrus Stripe Cookies are delectable, buttery treats with a citrus flavor burst. These visually appealing cookies are ideal for special occasions or whenever you crave a zesty-sweet treat.

Ingredients:

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 teaspoons citrus zest lemon, orange, or a mix
  • 2 and 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • Food coloring gels yellow and orange

Instructions:

Melt the butter and mix it with the sugar in a large bowl until the mixture is light and fluffy

Mix the egg, vanilla extract, and orange zest into the butter

Mix well until everything is well mixed

Add the all-purpose flour and salt to the wet ingredients little by little

Mix the dough until it holds together

Split the dough into three equal pieces

Leave some of it the way it is

For the second part, add yellow food coloring gel

For the third part, add orange food coloring gel

Work the dough around until the colors are spread out evenly

Use a small piece of each color of dough to make thin strips that are all the same length

The strips will look like stripes if you put them next to each other, gently press them together, and then twist them

Slowly press the ends together to close the twisted strip

Do the same thing with the rest of the dough and place the striped strips on a baking sheet lined with parchment paper

Put the dough strips with stripes in the fridge for about 30 minutes

Set the oven to 350F 175C and heat it up

After the dough strips have been chilled, cut them into cookies of any thickness you like

Place the cookies on a baking sheet, leaving space between them

After the oven is hot, bake the cookies for 10 to 12 minutes, or until the edges are just beginning to turn golden

After taking the cookies out of the oven, let them cool for a few minutes on the baking sheet

Then, move them to a wire rack to cool all the way down

Grill the marinated chicken breasts for about 6-7 minutes per side or until cooked through and no longer pink in the center

Remove from heat and let rest for a few minutes before slicing

In a large salad bowl, combine the mixed salad greens, cherry tomatoes, cucumber slices, and red onion slices

Top the salad with the sliced grilled chicken

Sprinkle crumbled feta cheese over the salad

Drizzle with a bit of olive oil and season with salt and pepper to taste

Toss the salad gently to combine all the ingredients

Serve the Lemon and Thyme Chicken Salad immediately, and enjoy!

After two to three minutes, the garlic should smell good

Add pepper and salt

Simmer for 10 to 15 minutes, stirring every now and then

Set the grill to medium-high heat while the sauce is simmering

Add a little olive oil, salt, and pepper to the cherry tomatoes that have been cut in half
