Ingredients:
- 300g pasta
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 6 anchovy fillets, chopped
- 1 teaspoon red pepper flakes
- 1 can 400g diced tomatoes
- 1/2 cup pitted olives, chopped
- 2 tablespoons capers, drained
- Salt and pepper to taste
- 1 cup cherry tomatoes, halved
- Fresh basil leaves, for garnish
- Grated Parmesan cheese, for serving
Instructions:
Follow the directions on the package to cook the pasta until it is al dente
Remove the water and set it aside
Warm up the olive oil in a big pan over medium-low heat
Chop up some anchovies, mince some garlic, and add some red pepper flakes
After two to three minutes, the garlic should smell good
Put olives, capers, and diced tomatoes in the pan
Add pepper and salt
Simmer for 10 to 15 minutes, stirring every now and then
Set the grill to medium-high heat while the sauce is simmering
Add a little olive oil, salt, and pepper to the cherry tomatoes that have been cut in half
As soon as the food starts to turn black, take it off the grill
Put the cooked pasta in the pan with the sauce
Add the pasta and toss it so that the sauce covers it all
When you serve the pasta, put grilled cherry tomatoes, fresh basil leaves, and grated Parmesan cheese on top of it
