Grain-Free Chocolate Chip Pumpkin Coconut Flour Cookies



Indulge in these delightful grain-free cookies that combine the flavors of pumpkin and coconut with the richness of chocolate chips. Perfect for a cozy treat on a fall day.

Ingredients:

  • 1/2 cup pumpkin puree
  • 1/4 cup coconut oil, melted
  • 1/3 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 cup coconut flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips grain-free
  • 1/4 cup chopped nuts optional

Instructions:

Preheat the oven to 350F 175C and line a baking sheet with parchment paper

In a bowl, whisk together the pumpkin puree, melted coconut oil, maple syrup, and vanilla extract

Add the coconut flour, baking soda, and salt to the wet ingredients

Mix until well combined

Fold in the chocolate chips and chopped nuts if using, ensuring even distribution

Scoop spoonfuls of the cookie dough onto the prepared baking sheet, then flatten and shape them using the back of a spoon

Bake in the preheated oven for 12-15 minutes, or until the cookies are golden around the edges

Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely
