For those who enjoy chocolate, these little chocolate mousse doughnuts are a delightful treat. Perfectly baked, they are filled with a rich, chocolate mousse. Ideal for special events or anytime you want something sweet to indulge in.
Ingredients:
- 1 cup all-purpose flour
- 1/3 cup unsweetened cocoa powder
- 1/2 cup granulated sugar
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup buttermilk
- 1/4 cup vegetable oil
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup mini chocolate chips
- 1 cup heavy cream
- 1/2 cup powdered sugar
- 1/2 teaspoon vanilla extract
Instructions:
Set the oven temperature to 175C 350F
Grease a small pan for doughnuts
Combine the flour, baking powder, baking soda, granulated sugar, cocoa powder, and salt in a mixing bowl
Beat the egg, vegetable oil, buttermilk, and vanilla extract in a separate bowl
Mixing until just combined, pour the wet ingredients into the dry ingredients
Add the tiny chocolate chips and fold
Pour the batter into each cavity of the greased doughnut pan, filling it to about two thirds full
When a toothpick is inserted into a doughnut, it should come out clean after 8 to 10 minutes of baking in a preheated oven
Take out of the oven and allow the doughnuts to cool in the pan for a few minutes, then move them to a wire rack to cool down completely
Meanwhile, get the chocolate mousse ready
Beat the thick cream until it forms soft peaks
Add the vanilla extract and powdered sugar gradually while whipping until stiff peaks form
After the doughnuts cool completely, cut each one in half lengthwise
To make a sandwich, pipe or spoon a dollop of chocolate mousse onto the bottom half of each doughnut and replace the top half
Optional: For added decoration, dust the doughnuts with cocoa powder or powdered sugar
